This salad is popular around the Mediterranean region, particularly in Greece, where it’s called Tzatziki, in Turkey, known as Cacik and some of the Arab nations, where it is named Khiar bil Laban. In Bulgaria a variation with added walnuts is made and there it is known as Tarator. Easy to make, packs a wallop of garlic both in the salad and in the dressing, it is good for all seasons, though probably best appreciated during warm summer days.
Ingredients:
2 cloves garlic, minced
2 cucumbers, peeled, (seeded if desired) diced
1 cup Yogurt Dressing
salt and pepper (to taste)
1/4 cup chopped fresh dill or mint
Mix all the ingredients in a bowl and serve slightly chilled.
